Holiday Sage Sausage Stuffing

Ingredients

1... pound Cannuli's Fresh Store-made Sage Sausage meat
........made with our own secret blend of seasonings
........OR our fresh Sweet Italian Sausage, if you wish
˝.. cup butter or margarine (1 stick)
4... large celery ribs, diced
1... large onion, diced
12. cups white-bread cubes (about 24 slices)
3... eggs
˝.. cup milk
˝.. cup minced parsley
. teaspoons rosemary, crumbled
˝.. teaspoon pepper

Instructions

1.. If you happen to have sausage links instead of loose sausage meat, use a sharp knife to remove casing. In 5- to 8-quart Dutch oven over medium heat, cook sausage meat, stirring frequently to break up sausage, until browned, about 20 minutes. With slotted spoon, remove sausage to bowl. To drippings in Dutch oven, add butter, celery and onion, and cook until tender, stirring occasionally.

2.. Remove Dutch oven from heat; add cooked sausage, bread cubes, eggs, milk, parsley, rosemary, and pepper; toss to mix well. Use to stuff 12- to 16-pound turkey. Or spoon stuffing into 13 x 9 inch baking dish; cover with foil and bake in preheated 325°F oven 45 minutes or until heated through.
